Ingredients

  • 1 large organic zucchini
  • 1 cup almond flour
  • salt, pepper, garlic powder (or cajun spice, check ingredients)
  • 2 eggs, beaten

Directions

  1. Combine almond flour and seasonings in a small bowl.
  2. Cut zucchini into fry-sized rectangles.
  3. Dip zucchini in egg and then dip and cover in flour mixture.
  4. Bake zucchini fries on a parchment-lined baking sheet at 425 degrees for 20-30 minutes or until brown and crispy.
