Salt & Pepper Avocado Egg Recipe

Baked avocado with eggs

Total Time: 25 minutes
Serving Size: 1

1 avocado
2 eggs
salt, pepper (to taste)
chives or any fresh herb (optional)

Slice the avocado in half and remove the pit.  Place in a small baking dish.  Crack an egg into each avocado half.  Bake at 425 degrees F for approximately 15-20 minutes.  Remove and add salt, pepper, chives, if desired.
