2 chicken breasts, boiled or baked until cooked
2 cups celery, diced
1/2 cup chopped walnuts or slivered almonds
2 tsp lemon juice or apple cider vinegar
2/3 cup Veganaise (or mayo with no bad oil)
Salt and pepper

Optional Add-Ins: grapes, dried cranberries, raisins, other nuts, etc.

Bake or boil chicken until cooked through. Combine all ingredients in a bowl.  Serve over a bed of spinach or on romaine lettuce wraps.
