Simple Chicken Salad

Homemade Chicken Salad

Total Time: 30 minutes

  • 2 chicken breasts, boiled or baked until cooked
  • 1 cup celery, diced
  • 1/2 cup chopped walnuts or slivered almonds
  • 1 tsp lemon juice or apple cider vinegar
  • 2/3 cup Veganaise (or mayo with no bad oil)
  • Salt and pepper
  • Optional Add-Ins: grapes, granny smith apple, dried cranberries, raisins, other nuts, etc.


  1. Bake or boil chicken until cooked through.
  2. Combine all ingredients in a bowl. 
  3. Serve over a bed of spinach or in romaine lettuce wraps.
