Ingredients
- 2 chicken breasts, boiled or baked until cooked
- 1 cup celery, diced
- 1/2 cup chopped walnuts or slivered almonds
- 1 tsp lemon juice or apple cider vinegar
- 2/3 cup Veganaise (or mayo with no bad oil)
- Salt and pepper
- Optional Add-Ins: grapes, granny smith apple, dried cranberries, raisins, other nuts, etc.
Directions
- Bake or boil chicken until cooked through.
- Combine all ingredients in a bowl.
- Serve over a bed of spinach or in romaine lettuce wraps.
