Ingredients
- 2 chicken breasts
- 3 tbsp coconut oil
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 red onion, sliced
- 1 can of black beans
- 1 cup raw or organic cheddar cheese, shredded
- 2 tbsp salsa (watch ingredients)
- salt, pepper, cumin, garlic powder, chili powder (to taste)
- Optional toppings: sour cream, cilantro, avocado
Directions
- Bake seasoned chicken at 350 degrees in a small baking dish until cooked through, approximately 45 minutes.
- Saute veggies in coconut oil in the frying pan.
- Place the sauteed veggies on top of the chicken once done.
- Cover with black beans.
- Top with cheese.
- Place back in the oven to melt the cheese.
- Top with optional toppings and salsa.
