Cauliflower Fried Rice

2 carrots, diced
4 broccoli pieces, diced
½ cup peas
1 head of cauliflower (or 1 bag of cauliflower rice)
1 small onion or 2 green onions, diced
3 eggs
1/4 cup Liquid Aminos (Braggs or Coconut Secret Coconut Aminos)
4 tbsp butter
Olive oil (optional)
Garlic powder or 1 minced clove
Salt and pepper (to taste)
Sauté veggies (except peas) in butter on medium heat until tender. Add fresh (cauliflower head diced in food processor until rice consistency) or cauliflower rice and mix together. Clear a small opening in the middle of the pan, add 3 eggs (can add a little extra butter at this point or some olive oil if you want). Add peas in. Mix well and cook until eggs are cooked. Add liquid aminos to taste (approximately ¼ cup). Add baked chicken breast for Chicken Fried Rice.
