Tasty blueberry muffins on a grey wooden background

Serving Size: 6 muffins

3 eggs
2 cups almond flour
1/2 tsp baking soda
1/2 tsp sea salt
2 tbsp coconut oil or butter, melted
1 tbsp Apple Cider Vinegar
2 tsp pure vanilla extract
2 tbsp Swerve (or20 drops liquid stevia – or to taste) (or 2 tbsp maple syrup)
1 cup fresh or frozen blueberries or a berry of choice

In a mixing bowl, mix together the eggs, coconut oil, vanilla extract, apple cider vinegar, and sweetener.  Add to this mix the almond four, baking soda and sea salt.  Mix well and add in berries.  Spoon the batter into muffin tins lightly greased with coconut oil.  Bake at 350 degrees F for approximately 20 minutes or until golden brown.
